Christmas Cake Recipe
Ingredients
9oz Plain flour 1/4 Teaspoon salt 1 Teaspoon mixed spice 12oz Stoned raisins 12oz Sultanas 12oz Currants 2oz Candied peel (chopped) 3oz Glace cherries (quartered) 2oz Blanched almonds (chopped) 8oz Butter 8oz Soft brown sugar 4 eggs lightly beaten 1 1/2 Tablespoons black treacle Brandy
Method
You should make this in September or October for the cake to be ready for December.
Line the base and sides of an 8" cake tin with a double layer of greaseproof paper, then tie a double band of brown paper 1" wider than the depth of the tin around the outside.
Sieve the flour, salt and spice into a large bowl.
Cream the butter and sugar until pale and creamy. Beat in a egg a little at a time. Stir in the treacle, then the flour mix, dried fruit, peel, cherries and almonds.
Put the mixture into the tin and bake in a cool oven (150C, gas 1.5) for 3 hours. Reduce the oven to (130C, gas 0.5) and bake for a further hour or until a skewer comes out clean. Leave cake to cool for 10 minutes then turn upside down and pierce with a skewer, then spoon some brandy over it. When it is completely cold, wrap it in greaseproof paper and foil and store it in a tin in a dry place.
Spoon brandy over the cake every two weeks.
