Chocolate pudding

Ingredients

  • 1 lb Good quality plain chocolate
  • 5 tbsp Liquid glucose
  • 5 tbsp Rum
  • 1 pt Lightly whipped double cream
  • 3 oz Ratafia or Amaretti biscuits, crushed
  • 1 tsp Cocoa

Method

  • Melt the chocolate. Stir in the glucose. Stir in the rum. The mixture may be warmed if too thick.
  • Stir half of the cream into the chocolate. Then stir the mixture into the remaining cream.
  • Oil and line a 9/10" tin. Sprinkle the bottom of the tin with the crushed biscuits and add the chocolate mixture. Smooth the top of the mixture by shaking the tin. Put in the fridge to set.
  • Turn out upside down and sprinkle the top with cocoa from a sieve.
